Our Tu-Bees Gourmet Lemon Honey is made with 100% Canadian honey and natural lemon essential oils. Combining a bit of sweet and sour in an extraordinary taste, which likens in similarity almost to Lemon Meringue Pie. It's a great addition to any herbal tea, as well as glazes, icings, and baking recipes.
Lemon Cream Cheese Icing
1 block cream cheese, softened
1/4 cup Tu-Bees Lemon Gourmet Honey
Whip cream cheese until smooth. Add honey and continue to cream. Spread over your favourite cake or cupcakes.
Old Fashioned Honey Cake
1/3 cup shortening
1/3 cup honey
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup 2% milk
In a small bowl, cream shortening and honey. Add egg and beat well. Stir in vanilla. Combine the flour, baking powder and salt. Add gradually to the creamed mixture alternating it with the milk. Beat on medium speed for two minutes. Pour into a square cake pan and bake at 350° for 20-25 minutes. Check the cake by inserting a toothpick into the centre. If it comes out clean, it is done. Cool for 10 - 15 minutes before removing from pan to a wire rack to cool completely.
Once cooled, frost with Tu-Bees Gourmet Honey Buttercream Icing
Lemon Mango Salsa for Salmon
1 large ripe mango, peeled and chopped
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, finely chopped
2 Tbsp. fresh cilantro, chopped
2 Tbsp. fresh lime juice, divided
1 Tbsp. Tu-Bees Lemon Gourmet Honey
1 small jalapeno pepper, seeded and minced
For the sauce:
1/3 cup Tu-Bees Lemon Gourmet Honey
2 Tbsp. hot sauce
4 (4-6 oz.) salmon fillets
Combine mango, bell pepper, red onion, cilantro, jalapeno, lime juice and Gourmet Honey in a medium bowl. Stir well and refrigerate until ready to use. Whisk together hot sauce and remaining honey and lime juice in a small bowl.
Rinse salmon and pat dry. Brush liberally with honey mixture. Place skin side up on a well-oiled grill over medium heat. Turn and cook for 8-10 more minutes and continue to baste with sauce.
Serve salmon topped with mango salsa.
